Côvo Premium (Goat Milk Cheese)
The herbaceous notes and pungent aroma of this exclusive pure goat’s cheese, made with pasteurised milk, easily confuses any attempt to guess your type of milk. The careful selection and the very special tuning give the cheese an incredible semi hard, ivory coloured, brittle and wet texture, especially closer to the rind. All this exquisite wealth is preserved with a noble wax protection. This is definitely a challenging cheese, ideal for very special occasions and deserves the best accompaniment. Ideal temperature of consumption: 16ºC.
Must be served a few hours after removal from the fridge. Cut the cheese to your liking and remove the wax along with the paprika. Taste this exquisite cheese with Chardonnay wines and pasta, a good selection of rustic bread or toast and dried fruit. Finish with a delicate Tawny Port.
