DOP “Terrincho” Cheese (Quinta da Veiguinha)
It is made from a handcrafted dairy of the Alfandega da Fé region (North of Portugal). A 60-day cure, resulting from the slow exhaustion of the curd after the coagulation of sheep milk (Churra breed from Terra Quente). Mild flavor and a clean taste. A strict compliance with hygiene standards ensures the extra quality of the final product – Terrincho DOP Cheese.
The most modern technology allows the microbiological richness of raw milk to be conserved, which, after receiving it (without refrigeration and pasteurization), is immediately transformed, thus allowing to take advantage of all the intrinsic characteristics of the raw milk of Terra Quente / Terrinchas Churras ewes.
