The Chouriça de Vinhais is filled with Bísaro breed pork. It has an IGP certification, which guarantees the consumer gets a product which was manufactured by means of ancient methods, and which has been subject to an independent control system. The meat is duly seasoned with red wine from the region, water, garlic, colorau bay and salt. It is a smoked sausage, and, preferably, it should be eaten after roasting over a charcoal grill. It can, however, be eaten cooked or raw.
