After picking it is sun-dried and does not undergo any processing, thereby maintaining all flavor, sea moisture and nutritional properties. Because it tastes strong and dissolves faster, it should be used in lesser amounts than traditional salt. It is applied at the end of cooking as seasoning and not in the confection.
