Quixote de La Mancha on the cavalry novel Palmeirim D´In Inglaterra, written by the Trás-os-Montes Francisco de Moraes, ancestor of the owners of the estates where this wine was born. From Literature to wine, the distinction remains. Soil: Schist origin, with medium contents in clay and granite origin with sandy texture. “Vinification and maturation: Manual harvest. Destemming followed by light crushing of the berries. Cold pre-fermentative maceration. Fermentation with moderate temperature control and gentle manual pumping over. Post-fermentative maceration. Pressing. Stage of wine six months in French wood after malolactic.”

Dry and fresh in the attack. Good volume and structure harmonized by notes of red fruits and spices to give a long and pleasant finish.

It goes well with strong cheeses, red meats and smokehouses. We suggest decanting the wine before serving.

Elegant and with good intensity. In evidence are the aromas reminiscent of ripe red fruits and slight notes of forest wrapped in fine notes from the wooden stage that add complexity to the set.
