It aged in new French oak barrels for 18 months. Wine not filtered or stabilized by the cold so that all its elements are respected. Ideal with intense dishes, red meats, and strong cheeses. Manual harvest for small boxes with careful selection of grapes. Total destemming, fermentation with moderate temperature control in stainless steel vats with daily pumping over and long post-fermentative maceration.
