Serra da Estrela Old Cheese – DOP has a production process that is the same as the buttery one, the big difference is the result of prolonged maturation, at least 120 days. The cheese paste is semi-hard to extract, slightly brittle and dry. The taste of old cheese is stronger, more intense and slightly spicy and or salty. Exclusive product marketed by a very limited number of specialty spaces. This cheese comes from the milk produced at Quinta da Lagoa, namely from the sheep of the Serra da Estrela breed, thus ensuring the quality and genuineness of the raw material. Cheese with Protected Denomination (D.O.P.) that recognizes, among others, the control of production and its authenticity. Due to its origin and method of production, it is a 100% natural cheese.
